Please note because we only raise a small number of heritage breed turkeys that we are not able to guarantee any specific size accommodations. If you are in need of a specific size range, we recommend you secure a broad-breasted white turkey in which we can better accommodate size requests.

Our heritage birds have dark feathers, and during processing, this can cause the appearance of "freckles" on the skin where they are plucked.  Please note that this does not affect the bird's taste, texture, or quality in any way. It is simply visible on dark-feathered birds, whereas white-feathered birds do not show in the same way.
